My cat likes the smell of coffee...

Strange cat. When I make the coffee at night to set the timer for the morning, as soon as I open the coffee can, he jumps up on the counter, in the morning when I come out and the coffee is brewing, he's right there next to the coffee maker. I keep a spray bottle of water next to the coffee maker because I'm trying to get him out of the habit of jumping up on the counter. Why on earth would he like that smell?

Are you sure it's the coffee? Or is he just trying to get your attention and knows that you go the coffee pot every morning and every night.

My cats know my schedule and plant theirselves in my way accordingly.
