Need some ideas.....

Help! I take lunch to work everyday. I am trying to downsize my lunches and to make them more healthy. The Winter gets hard because all I want is comfort food.

I take soup often but I'm looking for some different ideas for a light, but filling, cold weather lunch.

1/2 to 1 cp cubed roast meat, couple small chunks of cheese, diced avocado, dried cranberries, hand full of nuts, couple crackers, small piece of dark chocolate.

Keep the cheese separate and add right before eating, or turns into glue.

I'm a big fan of beef stew everyday. :smile: But leftovers were usually on the lunch menu, like some kind of casserole or goulash. Chicken, veggies, and noodles. I used to sometimes take oatmeal or scrambled eggs with bacon. Or antipasto salad. I have a bento lunchbox and used to throw whatever I had in there with crackers. Bacon cheeseburger salad.

I always ate at my desk so I didn't take anything that might annoy my co-workers. :jet:

Couple times a week I stop by Harris Teeter and get a pre-made salad. Chef, Cobb, etc. They are fresh and very good, with the exception if the little tomatoes they use. Those are awful and I just throw them out.

Right next to the specialty bread kiosk. They also have some pretty good looking hot bars, never tried them.

(I wanted to say a can of sardines to impress your office mates.)

Actually, it's cheaper for me to buy the pre-made than all of the ingredients needed that go bad and get wasted before I get to use them.
I've found HT not to be nearly as expensive as I was led to believe.

It's not Whole Foods, aka "Whole Paycheck."

My go-to was carrot, raisin, pineapple salad. I would shred carrots, raisins (soak in hot water to plump them up then drain) and drain and cut chunk pineapple into smaller pieces, mix with mayo or slaw dressing.

Here is one I found in case anyone need ideas:

Sautee Garlic and chopped Shallots in Olive Oil
Toss in a pint of Cherry Tomatoes and heat until they are ready to smash
Add 1 can of cannellini beans

Simmer and top with a couple spoonfuls of soft cheese and fresh basil

Serve with crusty bread
