New Year's Resolution

I resolve to stop oil frying stuff in my house. It's messy, it makes the house smell, and there's no point in it. The chicken I turned out tonight was good, but it wasn't good enough to not have a professional do that dirty work. I could have easily gotten fried chicken from the gas station and Nashville hotted it myself (which also turned out to be a mess but that was due to user error and not something that's just a normal part of the deal).

I made that resolution a long time ago. Hated cleaning up afterwards. I do all my splatter and deep fry outside on the side burner on the grill.

Clean as I cook type person..dislike mess around me. As hard as I may try, you can't do that when frying chicken. Get one splatter cleaned up.. then an explosion....

Outside is best.

Fryer lives on the back porch now.

I resolve not to melt butter in the microwave. The last 2 times, the timer has 1 second left and POP! I end up using the stove top anyway.

I don’t deep fry, but some things require frying. I can have maybe a dozen coddled eggs a year, after that they’ve got to be fried, same with potatoes or burgers.

I used to feed my young family on a very tight budget and learned to stretch a dollar pretty far, meaning we ate a lot of chicken.

One of my go to's was Bisquick "oven fried" chicken. It definitely wasn't KFC, but by adjusting the seasonings, it was a whole lot cheaper, and no one ever turned their nose up at it.

It also helped that my kids would try anything my wife or I cooked and uneaten leftovers were reheated on "musgo" night. Wasting money on our food budget wasn't an option.

My 1st wife and days in the military we had Shake n Bake .... or the banquet chicken frozen in a box

I still use that. The Original Pork mix on chicken is great.

Nice ...

The Mrs does a nice mixture ... but I'm having a nostalgia feeling

If you like ranch dressing take one or more chicken breasts - thawed or cooking takes longer
place chicken on a rack, coat with a layer of ranch
coat with a layer of Panco and Breadcrumbs
Bake or Air Fry until chicken is cooked to your liking

My daughter LOVES this ... we have had this as a chicken dish for decades, originally got the recipe from a previous girl friend

I still do S&B pork chops, but haven't tried it on chicken in ages. Banquet chicken used to be on the menu every so often, but the price to weight ratio seems to have slipped a while back.

When I was poor I fed my people casseroles and such. Rarely did we have a solid meat, like a chop or chicken piece or even a burger patty, because you can't stretch it. Plus I had this husband who was notorious for bringing his co-workers home for supper without first notifying me, so it was easy to just throw some more veggies or pasta in the mix.

my wife gets legs and thighs on sale in huge packs ....

I remember those 10lb bags of leg quarters very well. They were $2.99 and after trimming extra skin/fat from them, you still ended up with a LOT of chicken for 3 bucks. :yay:

I used to do that, and then re-package them in vacuum bags. Then I discovered BJs had Perdue pre-packaged chicken parts in large packs but 3-4 individual pieces vacuum sealed. Buy it, toss it as-is into the freezer and just take individual packs as needed. Slightly more expensive than big value packs, but much less than "prime" packs and no work to re-package.
