Phyllo Dough Ideas

Okay, I screwed up. For some bizarre odd reason, my brain confused phyllo dough for puff pastry.

Now I have a whole roll of phyllo dough and I'm stumped for what to make.

I do NOT want to make a dessert with it.

Any suggestions?

:drool: Spinach-Phyllo Triangles

Ingredients

•1/2 cup chopped onion
•1 garlic clove, minced
•1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
•1/2 teaspoon dried oregano
•1-1/2 cups (6 ounces) crumbled feta cheese
•12 sheets phyllo dough (14 inches x 9 inches)
•Butter-flavored cooking spray

Directions
•In a nonstick skillet coated with cooking spray, cook onion until
•tender. Add garlic; cook 1 minute longer. Stir in spinach and oregano; cook over medium-low heat just until spinach is warmed. Drain. Remove from the heat; stir in feta cheese and set aside.
•Spray one sheet of phyllo dough with butter-flavored cooking spray. (Keep remaining phyllo covered with plastic wrap and a damp towel to prevent drying.) Fold dough in half lengthwise; spray with butter-flavored cooking spray. Cut dough in half lengthwise, forming two strips.
•Place 1 tablespoon of spinach mixture on lower corner of each strip. Fold dough over filling, forming a triangle. Continue folding, like a flag, until you come to the end of each strip. Spray with butter-flavored cooking spray, making sure all edges are sprayed and sealed. Repeat with remaining phyllo and filling.
•Place triangles on a baking sheet coated with cooking spray. Bake at 375° for 15-20 minutes or until golden brown. Remove to a wire rack. Serve warm. Yield: 2 dozen.

Buffalo Chicken Phyllo Wraps

2 (5 ounce) skinless, boneless chicken breast halves

1/4 cup hot pepper sauce (such as Frank's RedHot®)

6 sheets phyllo dough

1 tablespoon olive oil

salt and pepper to taste

1/2 cup hot pepper sauce (such as Frank's RedHot®)

2 tablespoons distilled white vinegar

1/2 cup light garlic-flavored cream cheese

1 tablespoon olive oil

Directions
1.Combine chicken and 1/4 cup hot sauce in a shallow dish; marinate in the refrigerator for 1 hour. Grease a 9x13- inch baking dish.
2.Preheat oven to 350 degrees F (175 degrees C). Place phyllo sheets on work surface; cover with damp towel to keep from drying out.
3.Heat 1 tablespoon olive oil in a small skillet over medium heat. Remove chicken from hot sauce; season with salt and pepper. Cook the chicken in the oil until the juices run clear, 3 to 5 minutes per side. Remove from heat; shred. Combine the shredded chicken, remaining 1/2 cup hot sauce, vinegar, and cream cheese in a large bowl. Stir until creamy. Allow mixture to cool, about 5 minutes.
4.Remove 1 phyllo sheet from stack; fold in half lengthwise. Brush lightly with oil. Place 2 heaping tablespoons of the chicken mixture at the bottom of the folded phyllo, about 1 inch from the bottom. Fold bottom of phyllo over filling, fold in each side, roll wrap to the end of the phyllo sheet. Repeat with remaining phyllo sheets and chicken mixture.
5.Place phyllo rolls in prepared baking dish. Bake in preheated oven until phyllo is brown and flaky, 20 to 25 minutes.

Actually I can make this vegan and it sounds yummy to me. Perfect!

You think I should flip them during baking?
I would, just to ensure that both sides are crispy/crunchy. Or else place them on a cookie rack on top of your cookie sheet...that way air can circulate all around them to make them especially delicious.

The Spinach Triangles can be a bit time consuming to make. But if you're going through the trouble to make them, make up a big batch and freeze them. Take out however many you want to eat and cook them in the oven when you want a few at a time. They freeze really well. :yay:

Stuff it with just about anything and bake :yay: Bake and layer it with doctored up cream cheese/toppings :yay: You can make little cups out of it, bake them and fill them with lots of different things for yummy appetizers (buffalo chicken dip, Mexican bites, spinach dip, etc :yay:

Stuff it with just about anything and bake :yay: Bake and layer it with doctored up cream cheese/toppings :yay: You can make little cups out of it, bake them and fill them with lots of different things for yummy appetizers (buffalo chicken dip, Mexican bites, spinach dip, etc :yay:

It's just so flakey / crumbly that I hate to work with it and I hate to clean up after it. I don't like messy. :mad:

I just want to use it all up at once.

It's definitely a pain in the ass to work with. I like to wrap asparagus in it and bake it :yum: won't use it all up but it's a suggestion :wink:

I lost this recipe years ago, but I am sure you can wing it.

phyllo dough
chopped ham
shredded swiss cheese
melted butter
mustard
thawed chopped spinach, squeezed dry.

Mix butter and mustard. Mix ham, cheese and spinach.
Brush butter/mustard between each layer of phyllo dough. Spread filling on top, roll up jelly roll style. Bake in hot oven until browned.
