Here is a receipe that is my Mom's that I have used for years.
One large jar/container with lid
Use two cans of beets with juice
½ or ¾ cup of white vinegar with more beet juice
Taste test, if required use more vinegar/ needs a tang to it
Shell hard boiled eggs (I usually use a dozen)
Add eggs to the beets/beet juice/vinegar.
Put lid on jar or container, refrigerate for about 4 or 5 days
so the eggs will soak up the juice and vinegar.
Eggs should have a real colorful purple look to them.
You can reuse the beets/juice over, you may have to add a little
more juice and vinegar. I have reused it over about three times
before I notice that it has lost its zing.
Easy to make and excellent for Easter Dinner or anytime really

Pickled eggs are NOTHING. Years ago, I gave my ex the book "I Love To Fart Cookbook" - BIG mistake. Nothing but NOTHING can match the noxious fumes produced from their recipe for Curried Cauliflower.
