Pina Colada Cheesecake

I had to try making it, then I sampled it, it was soooooooo good, but I just gave most of it to my neighbor. I love my neighbors. :killingme

Okay, here it is

2 cups of Flake Coconut
1/2 cup of finely chopped Pecans
3 Tbsp. flour
3 Tbsp. butter or margarine
1 env. KNOX Unflavored Gelatine
1/4 cup cold water
3 tubs (8oz. each) Cream Cheese Spread
1/2 cup of sugar
1 can (20 oz.) crushed pineapple, drained, reserving 1/2 cup juice
1 tub (8oz.) Cool Whip

Heat oven to 350, mix cocunut, pecans, flour, butter; press into bottom of 13 X 9 inch baking dish. Bake 15 minutes.

Sprinkle gelatine over water in small saucepan; let stand 1 minute. Cook on low heat 5 min. or until gelatine is completely dissolved, stirring occasionally.

Beat cream cheese spread and sugar in large bowl with electric mixer until well blended. Gradually beat in gelatine and reserved pineapple juice. Gently stir in pineapple and Cool Whip; pour over crust. Refrigerate 3 hours or overnight until firm.

I had a little bit of the pecans left over, so I sprinkled them over the cake for a "garnish". Looked nice.

It makes a lot, so I needed two neighbors.:killingme
