Pineapple casserole recipe

2 20oz cans pineapple chunks, drained (reserve 6 Tbsp juice)
1/3 cup sugar
5 Tbsp flour
1 cup shredded cheddar cheese
1/4 butter melted
1 sleeve Ritz crackers, crushed
  • Preheat oven to 350
  • Combine sugar, flour, and reserved pineapple juice.
  • Add pineapple chunks and toss well to combine.
  • Spoon mixture into an 8x8 casserole dish.
  • Top with cheese.
  • Combine Ritz crackers and melted butter; spread over pineapple mixture.
  • Bake at 350 for 30 mins or until bubbly.
This was SO good!

I have heard people rave about this casserole before, and am curious about it. Because of the ingredients, I wouldn't make it at home since hubby doesn't do cheese on much of anything. I would definitely try if someone else made it because I want to know if I do like it or not!!

This was SO good!
I've had this before! Someone made it where I used to work and it was amazing!
It's just one of those recipes that you don't think it's going to be any good - but it is for some reason!!

It's not cheesy. It's like the cheese is a seasoning, savory to balance the sweet.

I've gotta try it - I love pineapple! But no way will my wife make it for me, but it looks easy enuff that I believe I can do it myself.

The other hit was noodles with carmelized onions, butter, and cottage cheese. THAT sounded 🤢 to me but it was so good I brought home leftovers.
I can see where this is coming from... this is probably from a recipe that used boursin cheese or ricotta and someone on a diet was like "oh cottage cheese is basically the same but so much less fat!" 🤮 just use the ricotta! I don't trust you people and your cottage cheese substitutions!

I used to always see this one woman on tiktok, That Midwestern Mom, who had a real thick Minnesotian accent and a lot of her content was making these whack-ass casseroles you'd find at midwestern potlucks. She even did a bunch of older ones from midcentury midwestern cookbooks that sounded absolutely bonkers. All the jello, cheese, cubed meat, and cracker concoctions you could never want. She was funny though and knew how crazy some of those casseroles were.
