Potato salad

Raised in a family that excels in making PS, I never had a recipe from the aunts or my mother. I am working on modifying the recipe in my head! Todays spud salad was by far the best and I am interested in other's recipes and ideas and want to share what made this so good!
I love vinegar and love a little on PS but it makes the mayo runny. So today, while I was boiling the baking potatoes and a couple eggs, I marinated celery, green and red pepper, scallion and purple onion plus a couple dill pickles; in vinegar. Cooled the cooked spuds and eggs in the fridge, mixed some mayo with the chopped eggs and added dill, celery salt, pepper and some paprika. When the potatoes were cooled, I gently mixed it all together.
I used to make larger cut potatoes and have recently made the pieces smaller but I stress over them not being cooked enough or cooked too much (mush).
Potato salad doesn't last long in our house and I could have eaten the whole bowl :lol: Marinating the chopped veggies in vinegar made a huge difference in flavor w/o making the mayo runny.

That's similar to how I make mine. Mix all the veggies and egg with mayo and a dash of vinegar. On occasion, I steam coliflower instead of potatoes. My niece actually prefers it that way. Me too. 😊

My mom's secret was to add Dill Pickle juice to the hot potatoes and let it soak in until they cooled. I always overcook my potatoes so I have made my sister the official PS maker of the family.

Minced onion if I have it (otherwise onion powder)

The dressing is:
mayo
yellow mustard
a blop of sweet relish if I have it (otherwise a pinch of sugar)
salt
pepper

My mother always used sweet gherkins in her potato salad along with the usual suspects, celery green and red bell peppers, onions and hard boiled egg. The dressing consisted of mayo, mustard, vinegar, celery seed, a little sugar and paprika. She made the best! It was always her contribution to any cookout, family gathering, etc. I make mine very similar but I do add some horseradish to the dressing and sprinkle some Old Bay on top.

My grandma was German and made that all the time. No mayo, just vinegar, salt, parsley and another chopped green.

I forgot that I also added yellow mustard and celery flakes.
It makes my husband very happy when I make this. He usually cooks the meats and I do the sides.

I make that and my grandmother was German. It was her recipe. Onions cooked in bacon grease, bacon, potatoes, vinegar, a little sugar, forget what else. Oh it was always served warm.
One of the recipes I have includes some frozen apple juice. Must make it sweet and sour.

Who was it that found out their MILs famous potato salad was just store bought from two different stores mixed together?

Personally my favorite is from Harris Teeter sprinkled with some celery seeds.

No sugar or dash of milk in your recipe?

We sprinkle the paprika on top when finished, garnish with radish slices.

Either way, it's good eating.

I love Weiss's red potato salad and Amish potato salad. In fact most of their potato salads and pasta salads are good. My brother said it's because they're Jewish and they own some Jewish delicatessens. I've often thought this area could use one of those.
I don't care for the Weiss tater salad, it's too much "slop" and not enough textures in it.

I like cubed potatoes better than sliced, onion, some pickle, hard boiled egg, and celery seeds.
