Sunday dinner, especially during the winter, was usually a roast cooked in the pressure cooker, after church. Our big meal on Sundays was always about 1pm.
A roast, with slivers of garlic poked into it - as much as you want. Salt, pepper. Add a little oil to the hot pressure cooker and brown the roast on all sides - make it nice and brown. Add your vegetables - onions, carrots, celery if you like, potatoes. Everything in chunks. Add water, covering about 1/3 of the roast. Cook according to your pressure cooker instructions, probably about 45 minutes.
While the roast is resting, you can make gravy with the juices in the cooker. Invite me over. I love Sunday pressure cooker roast.
If you like meatloaf, it cooks well in the pressure cooker also. just use your favorite meatloaf recipe, brown it and cook according to your pressure cookers instructions. If your pressure cooker has a rack, be sure to use it.
