Question about eggs...

Probably a stupid question.

I normally use eggs by the sell by date so I never gave this any thought. I have eggs that have a sell by date of 12/13/09. Are they still good or should I toss them. I picked up more today but plan to do some more baking so if I can use the older ones first, I'd just rather not waste them.

They should be ok. Sell by means they have to be out of the stores. Smell them when you open the shells.

If you put them in water and they sink they are good if they float up a bit they are bad.

You will know immediatly upon cracking if one is bad.
 
The 'sell by' date is kind of nebulous. There is another code on the box which indicates the true age of the eggs. I remember seeing a show and they said the eggs can actually and legally be repackaged within limits, and the code was the true marker you should use, not necessarily the sell by date. Been a while, so I don't remember the details.

That said, eggs last a lot longer than the sell by date if they are kept cold.

According to Alton Brown, refrigerated eggs will evaporate before they ever go bad.

Place the eggs in a large pot of cold water, If they float they need to go away.
