Quick Enchiladas

Microwave-safe dinner plate
3 corn tortillas
1 tablespoon corn oil
1 can of chili
1/2 cup grated cheese

On the plate:
Moisten/soften the tortillas in the oil
Spoon most of the chili into the tortillas, rolling each one shut, seam-side down
Spoon the remainder of the chili across the tops of the enchiladas
Cover the whole mess with cheese
Nuke for about 4-1/2 minutes on high

Comes out pretty good. Good enough for a quick lunch, anyway.

UMMMMM!! Sounds good. I'm all for easy. Don't forget to also top them with Sour Cream.

I made steak burritos last night :drool:
Grilled steak
Corn
Black beans
Rice
Cheese
Salsa and hot sauce
Bundle them in the burrito and I bake them in the oven

Husband was in HEAVEN ! My 2 year old, "I need more"... "I need more"
Leftovers :buddies: that's what's for dinner !!!

Yeah, I guess that's what it is. Never heard of a chili roll-up before. Anyway, it took care of my desire for enchiladas. Enchilada sauce would have gone well on it, but I didn't have any and rarely buy it because I use chili instead. :blushing:

We had venison tacos last night! They were yummy! I'm going to make venison chili this weekend, so maybe I'll try some chili roll-ups with the leftovers!
