My doctor encouraged me to cook more with quinoa and since I had time this morning- and I was already in the kitchen chopping veggies, I put a pot of red quinoa on the stove. Since I was already chopping veggies for a salad, I chopped some extra carrots, red, yellow and orange peppers and threw in some asparagus. Added a little soy sauce, lemon and crushed garlic along with a small amount of beef boullion, got the stir fry pan real hot and OMG! What a delicious breakfast/lunch!
