Quinoa

I'm back on my clean eating kick. What do you do with quinoa besides use it instead of rice in a skillet dish? Can you make pancakes or bread out of it like you can with other grains/seeds? Could it be toasted and used like bread crumbs?

And don't tell me to screw up chili with it because I'm not going there.

I know you can use it in meeatballs instead of breading. Other than that, I have no clue. I usually use it in place of rice. It's great with corn and black beans or a can of hoppin jack

I make quinoa in my rice cooker and once it is done, I throw in some seasoning, beans, a can of petite diced tomatoes and whatever else intrigues me at the time. It's then lunch for the week.

It's good with some EVOO, cilantro, a little lime juice and diced tomatoes and served cold.

You can make breakfast, salads, granola bars, quinoa sliders, fritters, quinoa chilli, turkey quinoa meatloaf, quinoa sushi,

I did find recipes for bread, pancakes, cookies, and a hot cereal. :yay: I'm sorry, but all those quinoa salads and veggie skillet things sound disgusting. Food has to taste good, not be a punishment.

I've been eating clean for 3 weeks and am really liking it. Quinoa I just don't get. It's like eating those little pellets in a bean bag chair.

I have a love/hate relationship with quinoa. The granola people say you have to rinse it well to get the bitter stuff off, then toast it in a bit of oil.

Well.

If you've ever seen quinoa, you know that they are teeny little seeds - in fact, they are a seed and not a grain. So that rinsing thing was a PITA.

Now for the love part:

OMG yum!!!

Nutty and chewy, like really good oatmeal. I made quinoa and oat waffles for dinner tonight and they were freaking off the hook. Recipe:

1 packet yeast
1 cup whole wheat pastry flour
1 cup cooked oatmeal
1 cup cooked quinoa
3 egg whites
1-1/2 cup buttermilk
1/4 cup honey
1 tsp vanilla
pinch salt

  • Proof the yeast in a little bit of warm water, maybe 1/8 cup (I did this all in my big glass batter bowl);
  • In a separate bowl, beat the egg whites until very foamy;
  • When yeast is bubbly, add the buttermilk, vanilla, salt, and honey, then mix well;
  • Add the flour, oatmeal, and quinoa and mix those in;
  • Add the egg whites and just blend, don't beat. The egg whites will make the batter fluffier;
  • Cover the bowl with a towel and let it sit for half an hour or so;
  • Make pancakes or waffles.
  • TIP: don't cook on a really hot griddle or waffle iron or the insides won't get done before the outside burns.

OMG they were SOOOO!!!! good! I slathered my waffle with homemade pumpkin butter and a little maple syrup. :drool:

Lady some of the salads are delish! and the veggie skillet some are a hit or miss. Just try them.

I rarely use Quinoa, but when I do, its always to make these. They are delish!

Gluten-Free Quinoa Pizza Bites

Ingredients

1 cup uncooked quinoa
2 large eggs
1 cup chopped onion
1 cup shredded mozzarella cheese
2 teaspoons minced garlic
1/2 cup fresh basil, chopped (or 2 tablespoons dried)
1/2 cup cherry tomatoes, diced
1/2 teaspoon salt
1 teaspoon paprika
1 teaspoon dried oregano
Pizza sauce for dipping

Directions

-Place the quinoa and two cups of water in a covered pot. Bring to boil and then simmer for 20 minutes or until quinoa is tender.
-Preheat oven to 350 degrees.
-Mix together all ingredients, except pizza sauce, in a medium mixing bowl.
-Distribute mixture into a greased mini muffin tin, filling each cup to the top (one heaping tablespoon each), and press down gently to compact.
-Bake for 15 to 20 minutes. Cool for 10 minutes before removing from the pan. Serve warm with sauce for dipping.

Makes 24 mini muffin bites. ( I have used a regular muffin pan, cooked a little longer, as well)

Okay, I feel bad now. I had some picadillo in the freezer and I mixed it with the cooked quinoa and it was delicious. So I'm sorry I busted on quinoa skillet dinners.
