Actually, I thought the same, until one day I opened one up in halves, pulled out the hard ball that is the seed, and sprinkled on some celtic sea salt. Very tasty. When the salt mixes with the fats/oils in the avocado, the flavor pops. Plus, the avocado is a highly nutritious natural food. Also used in guacamole, which is also very tasty.

Btw. Bacon fat, a saturated fat, is a very good natural fat, actually the one of best fats, for human consumption. It is pure compact energy that the body can easily convert to power the human body which doesn't spike insulin levels. Along with all other saturated fats from other animals like cows, chickens, turkeys, etc..

This may be true, however, at $11.99 and $15.99 lb respectively, it is too expensive for most folks. Though, since I've never had any of these two bacon varieties before, thinking I'll order a pound or two of each for giggles, to see if the difference is worth the price. Reckon it would be a nice treat every now and then, if they really are are good as you say, and the growers/sellers of them.

Where do you purchase these bacon's?

I think the difference in certain bacon's, pork, or even beef and chicken, is that they are pasture raised grass fed grass finished, without being adulterated through hormones, steroids, or antibiotics. Also known as, meats as nature intended. Or animal husbandry as it is meant to be.

Also, acorn finished.

But unfortunately, don't know of a source here in St. Mary's. Chuck's Butcher up in Bryan's Road in Charles Co. often has Tamworth available. They often close to retail this time of year, as they process deer for hunters and stay quite busy. There used to be a guy in Welcome, MD who raised Tamworth (and has them processed at Chuck's), but not sure what he's gotten up to. While bacon (and all parts from the pig) is good, we probably use more lard than anything these days. Nothing is better to fry an egg in, and nothing will crisp up a fish skin better than a good lard.

As for Ossabaw, we've never found it down this way. Found some "up the road" at a butcher in Springfield, VA before, but as you suggest .. retail prices not sustainable. I think by law Ossabaw has to come from Ossabaw Island off the coast of Georgia, so $$$.

But ultimately, I think if you pay attention to sourcing and how the hog is raised, you're far ahead of many others.

One of my favorite winter breakfast sandwiches is peanut butter and bacon on rye toast.
