Sauerkraut

I got some wonderful homemade kraut at the Bisbee farmer's market Saturday. It's quite mild, not pungent like what you get at the store.

What should I make/do with it? Besides just eat it out of the jar, I mean.

I also got some homemade kimchi but it didn't last long. We had pork belly and kimchi tacos last night for dinner, and I'm eating some today on top of a hot dog for lunch.
 
I like to bake pork chops in it with a bit of mushroom soup to wet it. Top with crispy onions.

Also cook fresh or smoked kielbasa in it.

Don't forget to add a bunch of caraway seeds.

Never cook “real” sauerkraut. You’ll kill all of the beneficial gut flora, thus nullifying all the hard work that went into making it.

Eat it plain, right out of the jar. I eat it as a side dish for breakfast or lunch when I’m home. Proper kraut should already have caraway seeds in it. No need to supplement.

We have a couple of crocks full of kraut year round.

The Foxhound cooked those half smokes he likes to buy in sauerkraut - but IN THE CROCKPOT. I think it made them slimy and ooky, but he liked them that way.

I don't mind them served together, because I love hot dogs, or kielbasa like that, and I've even roasted a pork shoulder in the oven with kraut. I just couldn't take the half smokes cooked in the crockpot with it for hours. shudder

Well, the gal is there every Saturday so there's no reason for me not to make a bunch of things with fresh kraut. :dance:
