ew do they still have the heads on? i bought fresh shrimp once and i had to go muslim on them and take the heads and tails off and devein. I'll never buy shrimp again like that. tasty, yes, but gross. How else would you devein them if you leave the shell on? you plan on deveining and then putting their shell back on?

You don't need to devein them if you don't mind eating their digestive track. But I think it's easy to devein them, even with the shell still on (if you have a deveiner - they're cheap). You run it under the shell up the back and the edge grabs the vein.

I like buying them with the heads still on, lots of flavor there (as you also said). Not trying to sound gross, but sucking the head out because of that great flavor is also common. :yum:

Where are you getting head on shrimp?

I had to go to the D.C. waterfront (Maine Ave Fish market). I couldn't find them anywhere else locally).

edit: I'm thinking you can probably get them from any decent fish monger if you just order in advance.

To devein them, use kitchen scissor. Insert behind the head just under the shell and cut along the back. There's a groove where the intestine is at so you would not unnecessarily damage the meat. Rinse in cold water to get the intestine out.

Nope, Buy them at any local seafood store..(heads off) throw them in the pot, a couple of min later take'em out, peel and eat. Add lots of beer and old bay while eating. Never deveined any..
