Camp Chef Smoke Vault 18 is the only smoker in my arsenal right now.

I've done pork butt, prime rib roast, spatchcock chicken, turkey breast and steaks for reverse searing. Post your recipes, links and pics.

we have the traeger and kamado joe - that one's our go-to. smoked a 20lb turkey for Thanksgiving. Going to smoke a Prime Rib for Christmas this year 🤤 Done that a couple times, but not on the KJ yet. It's hard to remember to take pics when you're so ready to just dig in.

My next experimental smoke is going to be pork belly burnt ends.
My son will be home from school by Friday morning :yahoo:so I'll definitely have a willing taste tester. Another one I want to try is jalapeno oyster poppers. I had one at the oyster festival this year and it was damned fantastic.

Jalapenos halved and scooped out
cream cheese and diced cooked bacon mixture
oyster
I think there was cheese to top it off, I'm not entirely sure.
Smoke and serve.

I've never been big on smoked meats. Guess I was turned off by people who smoked something to the point that it tasted like a campfire doused with water. Although my nephew-in-law made a really good smoked turkey this past Thanksgiving. He used a pellet smoker with pecan pellets.

I did get a couple pieces of pork specifically to try and make bacon. Smoking would probably be best. I have a bunch of plum wood to try on some fish or chicken sometime.

100% worth it. Husband makes them all the time just to snack on ... aka eat them all in one afternoon because they're amazing. We have several pork bellies in the freezer.

You probably wouldn't like my spare ribs. My goal was to infuse them with so much hickory that your lips would get numb. Wifey and the kids would rave about them.

New rig in my arsenal now is a Yoder YS640S. Before that I grilled and smoked on a Traeger lil’ Texas elite for almost 10 years. All things BBQ website has some great recipes as does the Traeger website.

I use this rub recipe for my smoked pork belly, I also use it on smoked salmon.

Got a question -

Some moisture got into my hopper - and my augur is now all clogged. I have an vertical Pit Boss smoker, and the augur is way under the damned thing. I know that somehow I will have to take it apart but - has anyone done this before? What a mess.

Thanks. When I don't know what I am doing, it helps to know which things to take out and which screws to undo.
Otherwise, I have an expensive mess - as I did years ago with a rear projection TV.

That's always been my claim to fame. I'm real good at taking things apart. Putting it all back together.... not so much.
