Soup/Stew recipes?

This is my favorite comfort food. Really rich, can't have it often, but will be on the table one evening this week!

Leeky, Creamy Chicken n Gnocchi

2 tbls olive oil
1 lb chicken breast, chunked
3 leeks, white and tender green parts,
split lengthwise and thinly sliced crosswise
5 ribs celery from the heart with leafy tops, thinly sliced
1 bay leaf
salt and pepper
4 cps chicken broth
2 cups heavy cream
24 oz gnocchi, thawed
1/3 cup chopped fresh parsley
1 teasp sweet smoked paprika

Heat the oil, add chicken and lightly brown. Add leeks, celery, bay leaf, salt and pepper to taste, and cook until veggies are softened.

Add the chicken broth and bring to a boil. Stir in the cream, lower the heat and simmer until soup bubbles at the edges. Add the gnocchi and cook for 5 minutes. Remove the bay leaf. Stir in the parsley and paprika.



Rachael Ray's recipes are usually too ful of funky ingredients that I never have on hand, but I LOVE this one...
