Stuffed Peppers

Had them once, maybe twice, probably in the school cafeteria a billion years ago. I vaguely recall that they were okay and I think they were green peppers hollowed out with some kind of rice, ground beef, tomato sauce type thing.

Fast forward and I find out that my oldest likes green peppers and my BF's ex brings him stuffed peppers. She puts too much garlic in everything and I'm too polite to say did your ex bring over dinner again because you could use a breath mint or a gallon of mouthwash or something. This is not often and most of the time, everything is hunky dory but garlic seems to stick w/him and I have been known to get the dry heaves merely from the smell of garlic bread baking.

Back to the subject. I'm making stuffed peppers and my BF is going to eat them even if it kills him. think I have everything I need BUT when did they start adding cheese. I don't ever remember seeing a stuffed pepper with cheese and he even mentioned cream cheese which is weird because he doesn't like cream cheese. Is this a thing stuffed peppers with cheese? There's a lot of recipes that mention cheese, in fact they all do...did he mean mozzarella cheese maybe? And do you parboil? How long? A few recipes mentioned that without any reference on how long. So confused.

Stuffed peppers (and tomatoes) are easy. Basically meatloaf stuffed in a pepper. Rice can or cannot be added.

Gilligan's daughter gave me a Greek recipe for stuffed peppers and tomatoes that she made when living there. Haven't made it yet, but it looks fantastic.

I'm going to ask what everybody is going to want to know.........Why is his ex bringing him food?

Beats me. I think she's lonely and they're still good friends. Not sure how I feel about it, it's annoying on one hand, but on the other hand I think it speaks well of him that he wants to keep the peace and doesn't hate her. And I trust him. And it speaks well of me that I can talk my feelings about it out with him and don't nag him. But I do want to insert myself a little more into his life because he's inserting himself a little more into mine. I want my crappy cooking in his refrigerator, without garlic, and I want her to know it.

Nope. I got him a month after his divorce and that's one of things I made sure of for his sake. Although...he did mention that he was thinking about taking an insurance policy OUT on me. Something about being accident prone.

When I think of Greek, I’m thinking more like Domaldes. Spelling might not be right.
