I would not 'stop it down a few' the OP has the lens already at f5.6. If she does what you suggest it will take away from the overall look - 'the focus on the eyes' by adding to much depth of field. I would adjust the light output to control the photo shoot, get the correct exposure and NOT bracket, with kids especially you only get a few good chances for that 'great shot' don't take a chance by 'bracketing' to hope and get the correct exposure...
Can this be 'fixed' in photoshop - Sure it can, but if you are doing a controlled photo shot, nail your exposure first than tweak as needed...
