Sweet Potato

just brown sugar, tiny bit of cinnamon and drop in marshmellows a little bit before they are ready, you'll know, they smell fantastic!

Well, if it's realy huge, cut in half lengthwise to save time and score the meat with a knife. Criss cross. season with what ever you like, wrap in foil and bake.

Since I am a fan of steamed vegetables, I love using my rice cooker. Half or quarter the
potato. set on a folding metal colander/strainer placed in the steamer(elevated off the bottom). Add water, steam and yummy!

How on earth to cook a HUGE sweet potato? Boil, microwave, bake? maybe crockpot?
I put my Sweet Potato in a Micro-Wave Safe dish, polk holes in the Potato, add a little water, cover and cook 5 minutes, if not done the way I like it, I keep cooking in small increments until done. I like adding Honey, or Brown Sugar to mine. Enjoy!!

You can bake it like a regular potatoe, too. I wash them and put on a pan covered with foil because they will make a mess in your oven if you don't.
Bake around 400-425 for about 1 to 1 1/2 hours. Squeeze it to see if its tender and done. Peel the skin off and cover with butter and cinamon-sugar. yum.

I love to make sweet potato fries by cutting up the sweet potato, tossing it in some olive oil, salt and peppering it on a baking sheet, and baking them for about 30 minutes. Man, I could snack on them all day long!

My husband prefers to bake his with cinnamon and sugar.

One sweet potato usually makes an appropriately sized side dish for both me and my husband.

I'll never understand adding sugar to a "SWEET POTATO." Why not pour maple syrup all over a Poptart?
