Sweet Potatoes/Yams for Thanksgiving

Confound it! I'm tired of making the same old candied yams every year with the marshmallows n all that. I want to try something different this year!

Somebody brought what looked like mashed yams with a crumble top to the office banquet last year. That stuff was awesome!

How do you prepare your yams? Do you have a great recipe?

OR the Sweet Potato Souffle

Makes 8 servings

Coconut, lemon rind, and raisins are a bright surprise. "A lot of people buy my cookbook just to get this recipe," says Mrs. Wilkes.

4 pounds sweet potatoes, pared and sliced
1 1/2 cups sugar
2 eggs
1/2 cup raisins
Grated rind and juice of 1 lemon
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup evaporated milk
1/2 cup chopped pecans
1/2 cup butter or margarine, melted
1/2 cup shredded coconut
Miniature marshmallows

PreparationPlace the potatoes in a pot and add enough salted water to cover. Cook until tender. Drain. Preheat the oven to 350°F. Mash and whip the potatoes. Add the remaining ingredients (except marshmallows) and mix well. Pour into a greased casserole dish. Bake for 30 minutes. Remove from the oven and cover with marshmallows. Return to the oven and continue cooking until brown.

I'm not a huge banana fan, but this is by far my favorite holiday sweet potato recipe:

Whipped Sweet Potatoes and Bananas with Honey (courtesy of Tyler Florence)

Ingredients
5 medium sweet potatoes, scrubbed
4 bananas, unpeeled
1 cup (2 sticks) unsalted butter, at room temperature
1/4 cup honey
Kosher salt
1/2 cup all-purpose flour
3/4 cup dark brown sugar
1 1/2 cups pecans, chopped
Directions
Preheat the oven to 400 degrees F. Prick the sweet potatoes all over with a fork, put them in a roasting pan and roast for 30 minutes. Toss the bananas into the pan and continue roasting for 10 to 15 minutes, until both the bananas and potatoes are very soft. Remove the pan from the oven but don't turn the oven off.

When the potatoes are cool enough to handle, scoop out the flesh into a large mixing bowl. Peel the bananas and add them to the bowl along with 1 stick of the butter, and the honey. Season with salt and beat vigorously with a wooden spoon until everything's well combined and the mixture is fluffy. Spoon into an oven-proof serving bowl and smooth the top.

In a separate mixing bowl, use your fingers to rub together the remaining stick of butter, the brown sugar, flour, and pecans until the mixture is the consistency of coarse crumbs. Sprinkle the crumb mixture over the sweet potatoes and return to the oven. Cook for about 20 minutes, until the crumbs are golden. Serve hot

I just like plain candied sweet potatoes, baked with tons of butter and sugar..........with no Marshmallow, Cinnamon, or nuts crap.

want REALLY different? Sweet and Savory - YUMMY!

Mashed Sweet Potatoes with Cumin

4 sweet potatoes, peeled and cubed (about 3 1/2 lbs)
2 medium sized purple onions, coarsely chopped
1/2 cup butter or marg, cubed
1 teasp salt
1/2 teaspoon ground red pepper
2 tables maple syrup
1 tables lemon juice
1 teasp cinnamon
1 teasp cumin

Combine first 3 ingredients in a lightly greased 11x7 inch or shallow 2 qt baking dish; sprinkle with salt and red pepper. Bake, covered, at 375 for 40-45 minutes or until potato is tender. Remove from oven. Add syrup and next 3 ingredients; mash lightly, leaving a few lumps. serves 8-10

My Nana puts crushed pineapple, brown sugar, a little maple syrup and walnuts in hers :drool:

Marshmallows in sweet potatoes is an abomination.

Why take a perfectly good sweet potato and junk it up with sticky-sweet marshmallows? Doesn't make sense to me.
 
That's how I make mine with the marshmellows on top. Can't wait till Thanksgiving! :lol:

Me either, I LOVE Thanksgiving. The ladies sit around drinking coffee (then wine, hehe) and cooking while the guys are in the other room watching football or whatever it is their doing :lol:...ahhhh, good times.

Agreed, marshmallows are for s'mores :biggrin:

I can't even make Thanksgiving dinner now! (we got a new kitchen) Our new silestone countertop won't be in until after Thanksgiving! Stupid countertop guy didn't tell us we would have to have a new slide-in stove for the measurements. They suck. S'ok.. I'll just postpone Thanksgiving. When our new countertop comes in, I'll celebrate by making a HUGE dinner.

I really stinks trying to cook without a sink! At least I have a stove.

I make my sweet potatoes and add thinly sliced granny smith apples and pecans into them. :yummy: You can add raisins too, but I don't know why you would. :barf:
