Thai Lemongrass Soup

Decided I wanted to try to make something different, so I tried to emulate the lemongrass soup from Thai Inter. Looked up a few recipes online, then adapted.

So simple, fast and really good. The only thing I didn't use was spicy chili peppers.

Heat vegetable broth, add a couple diced gloves of garlic, couple tablespoons of lemongrass paste, lime juice, salt. While that comes up to a boil, slice some mushroom and dice some tomato and green onion and put it in a serving bowl. Add some uncooked shrimp to the broth mixture, cook for not more than a minute. Take it off the heat ladle it into the serving bowl over the veggies.

Less than 10 minutes start to finish.

How much vegetable broth? I am totally making this this weekend.

:shrug: Dunno, maybe 1/2 of a 32 oz container, 16 oz? Made 2 bowls. The lemongrass, lime and salt I just added until it tasted right. I cook by feel more than measurements.

Oh, and most recipes use cilantro. I forgot to add it.

That does sound good!!! Lemongrass paste in the ethnic section of food stores?

No, vegetable section of any grocery store. There's a row of them, lemongrass, parsley, etc.... in plastic tubes.
