We have recently been trying the recipies from "The 10 Things You Need To Eat" and I've got to say, I've never had a closer relationship with avocados or baby spinach. Does anyone else have this book?

I don't have the book but I love baby spinach and almost always have a bag in the crisper.

I am going to look for that book.

I love spinach and my favorite way of serving it is a small bit of olive oil and some minced garlic in a big saute pan - when the oil's hot and the garlic smells good, I throw in all the spinach I want and stir it until it's getting a good wilt. A splash of balsalmic vinegar and some kosher salt and then straight onto the dinner plates. It takes so little time to cook, I wait until everything else is done. The trick is to not overcook it. YUMMMMMMM

That sounds good, I've never made it with balsamic vinegar. Spinach is my favorite veggie. Hubby won't eat it and so far, neither will our son. So I'm always cooking it, and most veggies, just for me. :banghead:

I have an excess amount of swiss chard that might disappear in a timely fashion like that.

Lately we have sworn off all salad dressings and have been using balsamic and red wine. Id like to be able to get a little more creative with it though; i'm not too savy with flavoring my own dressings.
