what the heck do I do with it?

I impulse bought some thin cut eye round cuz it was on super duper red sticker costs a buck sale. Now I don't know what to do with it/...I was thinking about treating it like cube steak and making chicken fried steak out of it (no, no CMS, I make my own gravy:smack:) but I wasn't sure if that would turn out..other ideas?

Cut it into strips and add vegetables for stir fry...

Maybe pound it (tenderize it) and fry at high heat for steak sandwiches on toast. That's what I would do cuz it's quick and easy.

You have two choices to make:

(1) either cook quickly so that it is still nicely rare; or

(2) cook it in long and slow in a crock-pot, ala' beef stew, or in a soup, stir-fry, etc. Even if cooked this way, be sure to slice it rather thinly.

Otherwise, cooked medium or well-done it becomes too tough to enjoy.

That's what I'd do too... use a tenderizing mallet on it until it looks like the minute steaks (sandwich steaks) they get top $$ for in the store. Salt, fry in butter and onions and serve it on a really good roll.

These would be the only options I would do w/ it. You could even throw it in the crock pot w/ some beer and seasonings to do like a bbq beef.

How about country fried steak? Pound/tenderize the meat, season it, dredge it in buttermilk then seasoned flour and fry it up....then, make gravy with the drippings, a little of the leftover flour and milk. Serve with biscuts and green beans :yay:
