Boneless chicken breast diced small, sautee' with onions, salt, pepper, garlic and oregano (Optional) until browned. Add chicken stock, re-season; simmer til chicken is fork tender. Thicken with corn starch if desired.
Serve over freshly steamed rice. Mmmm! Mmmm! :drool:

You cook your chicken until it's brown?

If this is a serious question; yup, sure do, but not DARK brown; a nice "tan" is good for boneless skinless chicken breasteses. I use olive oil for browning raw chicken and raw pork. Adds flavor to the chicken stock, which adds flavor to the meat.....that whole vicious cycle, you know.....

Mine is similar, but I add peas, carrotts, and spinach.
