Football season...

Crock Pot Cream Cheese Chicken Chili (that's a mouthful!)

2 large chicken breasts, still frozen ( 3-4 if using the small ones)
1 can Rotel tomatoes
1 can corn kernels, do not drain
1 can black beans, drained and rinsed
1 pkg. Ranch dressing mix
1 T cumin
1 t chili powder
1 t onion powder
1 8-oz pkg. cream cheese _________

Put the chicken in the crock pot. Top with the corn(don’t drain corn), drained and rinsed beans, ranch dressing, cumin, onion and chili powders, stir to combine then top with block of cream cheese. Cook on low for 6-8 hours, stirring one or twice to blend in the cheese. Shred the chicken into large pieces
and serve over rice.
Can also serve in tortillas or taco shells.

I am gonna add a green pepper, chopped – and prbly some hot and spicy goodness in the form of jalapenos!

Not to nit-pick, I assume the tomatoes go in somewhere around the time the corn and beans go in? This sounds good and I love using the crock pot, will have to give it a try! Thanks for sharing.

Need a subsitute for the tomato :popcorn: Suggestions?

Rotel tomatoes are canned diced tomatoes with chilies. I think they are probably added to this recipe 1) for the liquid and 2) for spice/hint of heat and 3) for color.

So in place of tomatoes add any colorful pepper, onion, spice that you can tolerate and add about a 1/4 to 1/2 cup of liquid - looks like you should probably add chicken stock.

If you can't do peppers, onions, spice, then just replace the can of rotel with a can of kidney beans (including liquid). Will give you some color and liquid and fits the other ingredients.

Thanks. I used beef stock now when I make chili. I think the chicken stock would probably work for this or the kidney beans as well.

I pinned this a few weeks ago but it's been too hot in Va Beach to think about chili. I think I might make it tomorrow anyway.

It was on Pinterest. Sounded like a good choice for a lazy Sunday. I will prbly add other stuff, I am a chronic 'fixer-upper' lol.
I am still running my air - the humidity has been so bad here - but I am wanting some good cooler weather food :) ...

So it is one TABLESPOON cumin and one TEASPOON chili powder?
Usually T=tablespoon and t=teaspoon.

I have this in the crockpot right now. I thought I had a bunch of cans of rotel but apparently didn't have any so I just used a can of diced tomatoes and a small can of diced green chilies. We'll see!
