Tomato Pie

No but I want to try it! Paula Deen made it recently on her show... Tomato Pie Recipe : Paula Deen : Recipes : Food Network

Ingredients

  • 4 tomatoes, peeled and sliced
  • 10 fresh basil leaves, chopped
  • 1/2 cup chopped green onion
  • 1 (9-inch) prebaked deep dish pie shell
  • 1 cup grated mozzarella
  • 1 cup grated cheddar
  • 1 cup mayonnaise
  • Salt and pepper
Directions

Preheat oven to 350 degrees F.

Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes.

Layer the tomato slices, basil, and onion in pie shell. Season with salt and pepper. Combine the grated cheeses and mayonnaise together. Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.

To serve, cut into slices and serve warm.

I am so very blessed
Tomato Pie is wonderful. But please be sure to thoroughly drain your tomatoes, or else your pie crust will be very soggy.

A tomato/onion combo is wonderful.
A tomato/bail combo is to die for.
A tomato/bacon is to die for.

Baking Question

I am a good cook but not much of a baker so I have a question about the pie shell. Recipe says a 9" pre-baked pie shell. How long do I cook the shell for and does it need to be fully cooled before adding the tomato slices?

Are you making the dough from scratch? If not, follow the directions on the package :lol: and remember to poke holes all over with a fork so it doesn't puff up and/or crack :yay:

Ha! No way from scratch! I was really hoping the answer would be "oh, you can buy it pre-cooked".. I can at least follow directions on the package!!! I hope.

It was YUM, YUM!!! A little bland so I will spice it up more next time. I suggest drying the tomatoes on paper towels. Worked better and faster for me.
