What will I do do with all of these tomatoes? What would you do?

I'm going to try roasting them with italian sausage. This time of year is when it's starting to get fantastic with tomatoes.

I'd give them to one of my forum pals like ....ME! :biggrin:
Where did you get them?

I just planted 10 plants. German Heirlooms, Russian Kiln or something & Lemon boys.

These are store bought at the nursery where Nenette works. I think they're small heirlooms, but I'm not sure (I cut one up for a sandwich earlier and it was real good).

We're going to grow a tomato plant this year for the first time, I think she'll bring home one this week. Definitely looking forward to it.

Thanks. Now that you mention that, we'll probably get a few - why not. :buddies:

I clipped a little rosemary off of our small one in the yard for this meal- smells great. Might grab a few basil leaves while I'm at it (the basil is kept indoors).

So here's what's happening so far (a slightly modified Jamie Oliver recipe):

Heated up an pan with olive oil and pancetta.

High-heat roasted the tomatoes until I could remove the skin.

Rubbed olive oil, salt, pepper, caraway seed, and fennel seed into the italian sausage. I placed the sausage in between the tomatoes (once the tomato skins were removed), then sprinkled it all with minced garlic (6 cloves or so), salt/pepper, a little oregano, fennel, caraway, and put it back in the oven at 350 (estimating an hour or so).

I put a pot of water on to boil for gnocci. Smells good in here... :drool:

More to follow hopefully.

No he can't. Look up fudge packer in the dictionary and you'll see a pic of Steed. He complains to admin when pics of voluptuous women are posted so I may as well get him upset. :lol:

I placed the sausage in between the tomatoes (once the tomato skins were removed)
So you splashed some oil on everything, stripped the tomatoes naked then put the sausage between those big, juicy tomatoes.


With all this lewd behavior going on, MrsSteed's really going to be furious. :lmao:

Can as much veggies as possible. If half of what some people think will occur in 2012 is true, you will be glad you did.

Forgot a few ingredients, I also added sun-dried tomatoes after turning the meat. Also used large shavings of parmigianno-reggiano for plating. I didn't take a pic of the bread, but I toasted some country italian bread slices which had olive oil on both sides. Then added some parm on top of those, also (good soaker upper of the tomato sauce).

Here's what came out of the oven:

We recently were at a dinner where baked stuffed tomatoes was one of the courses. Medium sized tomatoes scooped out and stuffed with a spicy pepperjack type cheese. Light breadcrumb topping to cover the cheese and then popped in the oven until they were warm and the cheese was all melty. (I think the cheese might have had a bit of jalapeno minced to give it more bite). But these were deeeeevine. I ate every bite of mine and was tempted to lick the plate.

The other thing I like to do with especially tasty tomatoes is a caprese salad. I know, it's predictable...but it really takes advantage of really good tasting tomatoes.

And of course, when the tomatoes are particularly good, how can you go wrong with a BLT or a fresh bruschetta?
