This is more for a weekend trip, but check out Cathedral Falls near Gauley Bridge, WV. The falls are 60+ feet high and you can stand in the water at the foot of the falls. There are some broader and lower falls close by called Kanawha Falls. At Kanawha Falls, there is a picnic area overlooking the river.
This entire area is known for its white water rafting as it is very near the New River Gorge. A couple of state parks and a jet boat ride to the base of the New River Gorge Bridge (cross through class 1 rapids on the way to and from the bridge - you will get wet!) are also close by.
The New River Gorge Bridge is the 2nd longest (or highest, I forget) single span bridge in the Western Hemisphere and you can pile 2 Washington Monuments and the Statue of Liberty under it and still not hit the bridge!!!

If you are into gambling, Charleston, WV has a casino and it is 45 minutes from the Cathedral Falls. Plenty of camping in the area and some hotels are also there.
