Low fat breakfast sausage recipe:

1 lb Gimme Lean veggie sausage
1 lb ground chicken
2 lbs ground pork

4 tsp kosher salt
3 tsp ground black pepper
4 tsp ground sage
1 tsp ground rosemary
2 T brown sugar
1 tsp ground nutmeg
1 tsp cayenne pepper
1 tsp red pepper flakes

Break raw meat and veggie sausage into clumps and scatter on mixing board. Combine seasonings well and scatter over meat mixture. Working quickly, hand mix ingredients (yes, you have to get your hands messy), kneading lightly to combine meat and seasonings thoroughly.

Place sausage in a large bowl and chill thoroughly. Divide into 8 equal parts, wrap tightly and freeze.

A 2 oz patty = 94 calories and 4 grams of fat.
Compared to a 2 oz Jimmy Dean sausage patty = 230 calories and 22 grams of fat.

And it is deeeelicious! Turkey sausage sucks ass in a major way and veggie sausage is just...guh. But this is flavorful and juicy, and has a normal sausage texture, with less than half the calories and one fifth of the fat. If you didn't know it was made with chicken and veggie protein, you'd think it was just pure pork sausage.

I make my own country and Italian sausage. Use Boston butts and or picnic's when they go on sale. The sausage is very lean and you have to use a light spray in the pan before cooking and there is no fat in the pan when done cooking. It's a hell of a lot better than any store bought sausage and a lot healthier to eat. It's my family's over 100 year old recipe that they made and sold in their store. I modified the recipe for more currant ingredients. They used to put salt peter in their sausage way back when.
