Just sneakin' around....
Was watching an old Project Smoke (or one of the variation shows he has...) and he did a barbacoa. The BBQ name is taken from barbacoa.

It consists of a dutch oven of cut up veggies with a marinated pork butt on top, covered with avocado leaves, and put uncovered in a smoker for about 6 hours. I used the basics, but modified it for chicken, used veggies and spices that went better with chicken.

Potatoes (from my garden), butternut squash, celery, onion, carrots, radish, some tomato paste, Bells seasoning, minced garlic and salt. Halved a whole chicken and removed the breastbone, seasoned one half with seasoning salt, put it on top of the veggies and topped with sliced onion (the other chicken half went into the freezer). Put some cherry smoke pellets in a smoker tin, put it all on the gas grill, added water to cover the veggies.
