Beef Stew Recipes

I have questions. Volunteered to fix beef stew for a stay-at-home Saturday night dinner and movie date. I can't find my go to recipe, so I've been digging through the internet and finding all kinds of stuff I didn't know about. Like short ribs instead of stew beef, something about better flavor and Guiness Beef Stew which I've only read about and never eaten, but reviewers swear it's the best thing they've ever tasted in their lives. I don't like guiness beer - can't imagine how that would be good but layers of flavor, rich etc etc sounds tempting.

Any suggestions? Ever tried short ribs instead of stew beef? Does it make a difference? I want to use the crock pot so that's a nonstarter for anything else. And I've had problems from time to time with stew beef being either mushy or chewy. TIA

I wing it. Start with a chuck roast cut into 1" chunks, which I fry up in my stew pot with some peanut or olive oil. Deglaze the pot with beef broth or whatever liquid that sounds like it might be good for beef stew (Guiness would work). Add the veggies and seasonings, cover with beef broth and a hit of balsamic vinegar, maybe a can of Rotel if I have one, then let it cook on low for a couple hours until everything is tender. Taste and adjust throughout.

The only consistent is I always use chuck because it's more forgiving. When I've used other cuts of beef they're always tough and dry.

I don't recommend the Guinness stew, Guinness gives it a burnt oatmeal taste.

Cut the veggies bigger than normal, add a cup of red wine and some butter. The stew will be great.

No, but I would love to try it. If you try it, make sure you tell us how it came out! :yay:

Like @Kyle alluded to, might want to slow cook them first, then add the veggies.

Even if you just use the Essence to season the stew meat, it makes a difference.

Short Ribs are great for adding extra flavor to the broth but if you just want to use stew meat or a roast as mentioned, a trick I use to add boost to the broth is to add a teaspoon -tablespoon of Better Than Bullion, Roasted Vegetable Flavor.

Stew beef or chuck roast cut in chunks, about 4 potatoes peeled and diced, I use baby carrots, onions, beef broth, tomato paste, bay leaves, thyme, salt and pepper, I also use the McCormicks Beef Stew packet to help thicken it up. I also brown my beef with some flour and olive oil. Serve with nice, warm biscuits. I made this a couple of weeks ago, had for 3 days and froze the rest.

Thanks for all the responses. Saving it for later, decided on Mississippi Pot Roast instead. It's beefy and I've never screwed it up.
