Mexican Lasagna.

INGREDIENTS
1 pound lean ground beef
1 (1 ounce) package taco seasoning mix
1 (14 ounce) can peeled and diced tomatoes with juice (I use stewed tomatoes w/ green pepper & onion)
10 (6 inch) corn tortillas
1 can refried beans
1 cup prepared salsa (medium)
1 cup shredded Colby cheese

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet over medium-high heat, brown the ground beef, and stir in the taco seasoning and tomatoes. Line a 9x13-inch baking dish with half the tortillas. Spoon the beef mixture into the dish, then top with the remaining tortillas. Spread salsa over the tortillas and sprinkle with the cheese.
Bake at 350 degrees F (175 degrees C) for 20 to 30 minutes, or until cheese is melted and bubbly.

I've got pre-race on now, gonna try to catch a nap though. It's the b/f's birthday today so we're going out to dinner and a comedy club later. He was trying to be funny earlier ... he asks DQ, "Do you know what today is?" She replies: "Duh, it's Sunday ... race day! :duh:" :lmao: :lmao:

That's mah girl! :diva:

Kevin Costner did an excellent job!

I hate when they just say "Gentleman, start your engines". Boring! He put some life into it!!

They were talking like - today's temperatures are a bit colder than yesterday in California - so it's messed up the engine tuning, fuel ratios, etc.

A couple of engines have overheated, slamming a valve into a piston. Not a good thing when you're running at 200 mph!
