I've got a package of bonless/skinless chicken breasts thawing for dinner tonite. Tired of the same old, same old. Anybody got a recipe for something good, quick and not too heavy on the calories?:howdy:

Slice lengthwise.

Quick dip in mixture of flour and lemon pepper.

Pan fry in hot butter.

pound em flat and then roll them up with ham and cheese and bake :drool:

or marinate in yogurt and indian spices and grill

or cut into chunks and put on skewers with veggies or pinapple and bacon chunks
or, or, or...you can do ANYTHING with chicken . I should know its all i can afford to eat :killingme

Define "same old same old". There are a ton of things you can do with boneless chicken.

I usually season them with some mexican spices, slice peppers and onions and serve them fajita style, or season and put them on the grill. Just wanted to try something different.

Maple Dijon Chicken Thighs

1 1/2 - 2 pounds boneless, skinless chicken thighs
2/3 cup dijon mustard
1/2 cup pure maple syrup
2 tsp white vinegar
1 tsp lemon juice
1 tsp dried rosemary

Preheat oven to 450.

Line a 9x9-inch pan with heavy-duty foil. Place chicken in bottom on pan. Whisk together dijon, maple syrup, vinegar, lemon juice and rosemary. Pour over chicken. Turn chicken to coat.

Bake for 40 minutes. Sprinkle with fresh rosemary, if desired.

If you don't like/have maple, you can substitute honey.

Place in a pan with a can of cream of mushroom or a can of cream of celery, add some water (about two or three cans worth) and bake with foil on top... near the end throw some pillsbury butter biscuits on top of the chicken and gravy side by side and bake until the biscuits are nice and golden on top... super easy, YUMMY chicken and dumplings :p made it lots of times when I have no time to cook but want to have a good dinner...

What else do you have in the fridge/pantry?

I'd do like LT said, but stuff them with spinach, roasted red peppers and cheese. After cooking, spoon some salsa over the top of them. Nom.

tomato soup tastes like blood and ketchup mixed and warmed over. It should be used as torture at gitmo. :barf:



.... I dont think I will ever be able to picture tomato soup quite the same way ever again....

Though .... it really is amazing when made with milk and italian seasoning..... :drool:

Put maple mustard chicken on a hamburger bun with a slice of pickle! You won't have to go to a drive thru for a day!

My favorite...

Simple Greek Lemon Chicken and Potatoes

4 teaspoons olive oil
4 tablespoons lemon juice
4 garlic cloves, crushed
1 teaspoon dried oregano
12 skinless chicken thighs
12 small new potatoes, halved
2 lemons, cut into wedges

Directions:

Combine the olive oil, lemon juice, garlic and oregano and use to coat the chicken. Set aside to marinade for at least 30 minutes.

Preheat the oven to 375F.

Put the chicken, marinade, potatoes and lemon wedges into a roasting pan and roast for 45 minutes to an hour, until the chicken is cooked through, and the potatoes are tender.

pick up some Tiger Sauce at Food lion. Slice the chicken up about 12 inch strips and soak it in tiger sauce and a few tablespoons of olive oil. Fry it up and make some rice. It is a little bit spicy.

I cut myself slicing a hotdog once. automatically put my finger in my mouth. voila...cambells tomato soup.






im kidding. I just have a healthy imagination and a serious distate for tomato soup.
