Our KOA will supply the turkey, ham, and mashed potatoes/gravy; the rest of us are to bring a side dish or dessert. I usually take deviled eggs to these things and they are always a hit, but I'm thinking about changing it up. What's something easy (remember my limited cooking capabilities) that people will gobble (ha) up?

I'm also low carb, so bonus points if it's something I can enjoy.

Damned glad to meet you
Maple Pecan Sweet Potato Medallions.

I made some Mini Asparagus bundles tied with bacon ribbons that were pretty yummy too.(cut the bacon in half long ways)

Butternut squash?
How about some brussels sprouts?
Why not both? (sold in the freezer section of Giant...)

I can tell you why not. Some things just aren't meant to be grouped together. Apples and oranges for instance. Oil and water. Fish with anything. Onions with anything. Why take a perfectly good veggie like Brussel sprouts and mix it with another perfectly good veggie like butternut squash and try to make it taste good. It would take me longer to separate the two vegetables and pick out all the onions then it would to chop up a butternut.
Down girl..... down... That was meant to be a joke.

What are your thoughts on Shepherds Pie?

I like that - not with sheep though. I don' have a recipe for it that I'm willing to try yet. I have bought the pre made mashed potatoes (I make lousy mashed potatoes). Six containers last count. All with expired dates.
But the foods touch. Should I get you one of these?
