An ex boyfriend of mine used to tell his friends all the time if you're lucky enough to find a weirdo, never let her go. Thought he was talking about me until I became his ex-girlfriend. I was traded in for a weirder model.
He sounds like an *******.

Roasted veggies of all kinds!
Yellow squash, sliced thinly, salted and baked on a cookie sheet! Although, this would never survive my constant sampling so this isn’t a “shared” dish.
Brussels sprouts, quartered, and roasted with tiny pieces of potatoes. I especially love to coat it with oil and onion powder before roasting.
Perhaps green beans amandine, or garlic roasted green beans.
Creamed spinach!
Or maybe take a creamy asparagus soup?
I’m not too fond of cranberry, but I do like to crack open a pomegranate and waste an entire hour of my life picking those damn little tedious seeds to go with dinner.

I get a little ramped up about vegetables 🤓

Just looked her up. Nope I'm a brunette, at least 100 pounds lighter than her, and I don't wear much makeup. I am short though and have a full luxurious beard.
I always pictured you with big forearms with anchor tattoos on them.

I love roasted veggies. Carrots/Parsnips are two of my favorites. Could eat them every day!

How about carrots? I often would serve variations of the Copper Pennies or Golden Coins recipe, such as:

Sub out the bacon for prosciutto. You will thank me later.

You sure will! Asparagus is one of my favorite veggies. Prosciutto wrapped asparagus has become my signature dish and am always asked to bring it to potlucks and cookouts. :diva:

I used to make an Orange/ginger glazed carrot. Hubby keep asking me to make it again. Maybe I'll do that instead of squash.

One of our family side dish traditions for Christmas is Tomato Aspic. It goes great with ham, chicken or turkey. My mom would make this for us every year and after she died my sister and I decided to carry the torch. The first Christmas, it turned out perfect, as though mom was in the kitchen with us, guiding us through each step. The next two years, not so good. We kept ending up with a pot of warm tomato juice with strings of gelatin. So basically, our new Tomato Aspic tradition is just seeing if we can actually make the damn stuff!
