:drool:Can you imagine just how good this will taste? :yahoo: Who knows how old the cheese is we buy at the grocery store. I try to buy local too whenever I can.

My father in law drove to Ohio weekly to pick up cheese deliveries for the Amish. Since he passed they were having a hard time finding someone to do the pick ups so I am sure this will greatly help them. Makes me happy.

Isn't cheese supposed to be quite aged to be good? I'm not a cheese maven so I don't know the answer.

Found their Pepperjack and Cheddar this week at the Market at the Charlotte Hall Library. Two thumbs up for the Pepperjack. The cheddar was very mild, as expected, but the texture was somewhat dry and crumbly. It worked nicely melted on burgers but, not a great snacking cheese. I will give them the benefit of the doubt and try the cheddar again from later batches.

I agree completely. Hubby thought it was just because I was pregnant and it was throwing off my senses but I said the cheddar had a texture like a mixture between styrofoam and sawdust. I think it may just need to age for a bit.

Their cheese is delicious. Not aged yet because they are new. The cheese curds are awesome! Can't keep them in the fridge for more than a day before they are gone. Cheese and crackers-delish!!!!!
