Corned Beef

Just finishing a Reuben made with the last of the corned beef. Good stuff.

We picked up a brisket at Costco last week and had it pickling all week long. Smoked it yesterday on our KJ and holy sh#t it was good. Only thing I'd do differently is smoke two at once so we'd have more leftovers for sammies :burp:

DID YOU KNOW that smoked corned beef is....pastrami. The butcher at McKay's told me that when I asked him if he thought corned beef would do well in the smoker. I made an enormous one for a party and every single speck got snarfed down.

Good call on doing two next time.

We smoked a couple a few years ago and it is insanely delicious.

Since I'm under the weather, I didn't cook anything for St. Patrick's Day - but I ordered it! I got dinners from Dream Weaver Cafe in PF and they were awesome! (I may have said this already! can't remember. )
