The recipie below, from an earlier poster, looks simple and tasty! If you want to put a fancier twist on the recipie, substitute pork tenderloin for the pork chops.

Ingredients
3 tablespoons Dijon-style mustard
2 tablespoons low-calorie Italian salad dressing
1/4 teaspoon pepper
4 pork loin chops, cut 1/2-inch thick (1-1/4 pounds total)
Nonstick cooking spray
1 medium onion, halved and sliced
Directions
1. In a small bowl combine mustard, Italian dressing, and pepper; set aside.
2. Trim excess fat from chops. Spray a 10-inch skillet with nonstick cooking spray. Preheat the skillet over medium-high heat. Add the pork chops and brown on both sides. Remove chops from skillet.
3. Add onion to skillet. Cook and stir over medium heat for 3 minutes. Push onion aside; return chops to skillet. Spread mustard mixture over chops. Cover and cook over medium-low heat for 15 minutes or until juices run clear. Serve onion over pork chops. Makes 4 servings.
For sides,
-cube some red potatos, and toss in olive oil, garlic, chopped rosemary, S&P, and grated parmesean cheese. Roast @ 375 degrees until golden.
-Tomato & fresh mozzerella salad. Slice tomatos and cheese into rounds. Alternately layer each around a plate. Drizzle with olive oil, balsamic vinegar, season with S&P and chopped basil.
