Easter Dinner

What's everyone making or bringing?

Inspire me! I'm going to my grandmother's she's in charge of the stuffed ham & turkey... I vouched for an appetizer, a side dish or two, and a dessert.

I'm making a side and a dessert. My dessert will be brownies drizzled with caramel and sprinkled with bacon pieces. :smile:

Not sure what Easter Dinner plans are yet, but if we are invited to my Other Mother's place for dinner, I might make pork fried rice, as a side.

see, this is why I hate going to my grandmother's for holiday dinners...so many yummy ways to dress up veggies! You know I'll be lucky if my boiled brussel sprouts come with butter :ohwell:


moms making prime rib. yum. However, I guess that's good for the diet lol

Honey glazed ham and all the trimmings. That's what I had planned, but now we may not even be home on Sunday, so we'll have whatever restaurant we end up at is serving.

What?!?! OMG I bet that will be insane!

I've got a small turkey in the freezer. Gonna cut it in half and grill it.

How is that going to be thawed by then :eyebrow:

We are doing our Easter dinner tomorrow, sonster is coming home from college tonight and has to head back on Sunday, plus my SIL is off tomorrow but has to work on Sunday. Spiral sliced honey ham, mashed potatoes, green beans, carrots, rolls, salad, and some kind of unknown desert as of yet . Very traditional for us for an Easter dinner. lots of leftover ham for ham and cheese sammy's i hope. My favorite part of the leftovers.

I'll be grilling some potatoes, corn and hare. No, the grandkids won't be here.

If you like artichokes, this recipe is delicious. It is actually the only recipe I ever submitted to a cookbook, and it was accepted.

Artichoke/Swiss Cheese Medley

2 cans quartered artichoke hearts (including liquid)
1/4 cup butter or margarine
1/3 cup flour
1 tsp salt, optional
dash pepper
1/4 tsp dry mustard
1 1/2 cups milk
1 egg beaten
1/2 cup grated swiss, divided (I always add more cheese!)
2 TB dry bread crumbs
paprika to taste

Drain artichokes, reserving 1/2 the liquid. Arrange artichokes in single layer in baking dish. In saucepan melt butter on low heat and stir in flour, salt, pepper and mustard. Gradually add reserved artichoke liquid and milk, stirring until smooth. Remove from heat. In a bowl combine egg and 1/2 the cheese. Gradually add the hot mixture to the egg/cheese and blend until smooth. Pour sauce over artichokes, and top with remaining cheese, bread crumbs, and paprika. Bake at 450 for 15 minutes.

Also, I have added some granulated garlic to taste, which I think gives it more of a kick. And, more bread crumbs gives it the idea of stuffed artichoke leaves, which I love. This is one of those recipes that you can change to your taste.

We are going to a restaurant for an Easter buffet brunch with Foxhound's family on Easter. Should be delicious!
 
Took it out this morning. It's on the BBQ grill with the cover closed, burners off. The warm temps under the cover will have it thawed by tomorrow.

It was barely thawed enough to cut in half with a serrated knife. Half back in the freezer, the other in the fridge where it will finish thawing by tomorrow night.

We're going out. I'm single, daughter is single, son is single again, my Dad is gone. After doing the big holiday meals and clean up since I was 19 years old, I'm over it. Spent the whole day in the kitchen and no time with family. I'm ready to go out.
