Eggs in Spaghetti

Mmmm...I just bought some Tater Tots the other night. I know what I'm fixing for dinner tonight!

I've never heard of the egg in spaghetti thing, but I've had omelettes made with leftover spaghetti so why not? :shrug:

Do you deep fry your tots? I LOVE fried tater tots with Open Pit BBQ Sauce.

I lived in Northern Italy for many years. Never heard about the hard boiled egg on spaghetti thing. However, a couple strips of broken up bacon, in the grease, dump in hot drained spaghetti, a couple of beaten eggs, whatever combination of Parmigiano or Romano you like best grated in, and presto, you have a nice easy dish of spaghetti a la carbonara. A glass of red wine and some crusty bread tops it off.

I am Italian, both sides from Sicily. Hard boiled eggs are very common to put in tomato sauce. Nothing odd about it at all. I bet you have no problem with putting catsup on an egg sandwich at McDonalds, so why a problem with tomato sauce and egg?

I've never tried deep-frying them, but it sounds tasty but not very healthy. I cook them in the oven until they are VERY crispy, then sprinkle them with Old Bay and wash them down with a glass of milk.
