I impressed her with my mad butcher skills. I think initially she was intimidated by the entire rib with all the bones. I'm glad she later admitted to being skeptical about the slow roasting method. She didn't say anything when I told her of my cooking intentions. I didn't pick up on her doubts.

She should be more afraid of me kidnapping her and taking her on a cross country road trip.

Buffalo is dry to me because it's so lean. A good bison burger will have a blop of butter mixed in, which kind of negates the health benefits of eating it over cow.

It was over cooked then, very easy to do if someone is use to cooking corn fed beef.
