I am excited to get my hands on some snakehead this weekend. From what I hear, it is quite tasty.

I like the firm-fleshed fish, like orange roughy, sea bass...great to cook on grill with little Cajun spice, salt, red and black pepper and lemon juice. I grew up on river in south, so fresh water catfish deep-fried is like a religion.

The snakehead was awesome. We prepared it several ways. The best was blackened with some Caribbean Jerk seasoning. We also made a ceviche with fresh shrimp, scallops & the snakehead. That was really good!

I had the mustard fried catfish special at Ruddy Duck (St. G's) last Friday night and it was MAG NI FI CENT! .

I had that too just the other day. It was definitely good but a bit "over-spiced" for my taste. Too much of whatever made it have that tangy taste...

Perch battered and deep fried...tuna, snapper, mahi-mahi and others on grill and blackened....red snapper...stuffed rockfish..and flounder flash-broiled in butter with some bay leaves sprinkled over top.
