As for potential charity donation recipients, may I suggest an animal charity in the area, as there are a lot of pet lovers on the board who support/promote rescues and pet adoption.

You pick a charity or community org, call them and tell them what you'd like to do and see if they'll offer up a bartender. You could get big county names involved and do all kinds of fun things.
This would go a long way toward erasing the memory of the old Rondevous in people's minds and get you a good reputation and a better crowd hanging out.
