What does corning the venison do for it and are you using pink salt?
Makes like corned beef, only leaner.

Please do, I’ve got a couple of corned beef recipes, but when I make it I go a step further and throw it on the smoker and pastrami it. I make the summer sausage also, but it’s generally just 98% lean hamburger, I don’t know why I keep forgetting I have a meat grinder.

This makes a very flavorful ham.

I usually change it up a bit by adding a tbsp of black peppercorns, mustard seeds and some red peppers. Also I leave out the liquid smoke since I cook it on the smoker.
