No, not the nicotine addicts, all of you that have meat smokers...

I just purchased one and am interested in recipes and techniques. What is the best type of wood to use for what food? Where do you typically buy your wood chips? I bought a huge bag of mesquite wood "chips" from Lowes, but they are more like mesquite logs. :lol: I need to buy a hatchet to bust the pieces up a little better. I found Hickory chips at Giant, they work great, but I still want to fiddle around with a bunch of other mixtures.

It's the Borg Queen. I love her to pieces. I used her as my av for the longest time many many moons ago. A very special forumite gave me precedent to bring her back. :lol: She'll be around for a while longer. :yay:

PM Vrai and Desertrat......I have no clue what he uses, just know that if he is gone for a while and the smoker isn't smoking, I have to add chips to it.

Oh, and he has them soaking in water when I throw them in. :shrug:

Who do I look like? Paul Bunyan? I'm not THAT into my smoker. :lol: My preference would be to have lovely little bags of wood shavings delivered to my door by UPS. If they throw them in a pretty little gift basket that would be even better. :yay:

Pastrami Rub

5 tablespoons kosher salt
4 tablespoons paprika
3 tablespoons ground coriander
3 tablespoons brown sugar
3 tablespoons coarse ground black pepper
2 tablespoons yellow mustard
8 cloves garlic, minced

Get a corned beef and soak it in water for at least 2 hours to remove some of the salt. Coat it with the rub mixture and smoke for 6 hours or so, depending on size. Anything bigger than the standard corned beef flat you get at the grocery store will need more time.

:yahoo: I may just have to give that a try tomorrow. I've got a corned beef in the freezer. :love: What kind of wood do you use? I have mesquite and hickory at the moment.

Hickory or mesquite is a good generic smoking wood, but you can get all kinds of stuff. Fruit wood (apple, cherry, etc) is used with chicken, fish and pork, and there are a bunch of others you can experiment with.

I like wood chunks because they're less messy and they don't burn up as fast. If I'm using chips, I make a foil packet for them and poke holes in it - seems to get more smoke that way. Or, with chips, you'll need to add more as you're cooking.

I always had the best luck with hickory - chicken would come out tasting like it was infused with bacon. I had to pre-cook the chicken, wet the chips and smoke for a long time but it was worth it.

Get a little hatchet. Some people soak the chips in various liquids before using. Beer, whiskey, wine , etc. Thanks for reminding me, I need to pick up more today. I like mesquite and hickory.

...you can have them send a few slaps of ribs, some pulled pork and a brisket or two and save the whole effort.
