Hey all you smokers!

No, not the nicotine addicts, all of you that have meat smokers...

I just purchased one and am interested in recipes and techniques. What is the best type of wood to use for what food? Where do you typically buy your wood chips? I bought a huge bag of mesquite wood "chips" from Lowes, but they are more like mesquite logs. :lol: I need to buy a hatchet to bust the pieces up a little better. I found Hickory chips at Giant, they work great, but I still want to fiddle around with a bunch of other mixtures.

W/M has both hickory and mesquite. Small bags and little managable chips.

It's the Borg Queen. I love her to pieces. I used her as my av for the longest time many many moons ago. A very special forumite gave me precedent to bring her back. :lol: She'll be around for a while longer. :yay:



but is that Alice Krige ? or the woman that substituted for a couple episodes during ST: Voyager ?

The chunks of mesquite are HUGE, some are too big to fit in the little chip hopper. The stuff I've smoked with the Hickory seems to come out with a more "smoked" flavor than when using the mesquite. I really want to try fruit wood. Maybe I'll get my dad to hack me some apple and cherry branches off of their trees.
How big are the logs? Bring them over and I'll see if I can't cut them into manageable pieces on the bandsaw.
