I need a cookie recipe

for a cookie swap..something appealing and pretty..I am out of inspiration..for cookies anyway...baby is telling me to make coconut cake and fudge :( but I dont hear any cookie suggestions..:killingme

Gooey Butter Cookies

Makes about 24

8 ounces cream cheese (1 package)
1/2 cup butter, softened
1 egg
1/4 teaspoon vanilla extract
1 18.5-ounce package yellow cake mix
1/4 cup powdered sugar

Preheat oven to 350 F (175 degrees C). In a medium bowl, cream together the cream cheese and butter. Stir in the egg and vanilla. Add cake mix, and stir until well blended. Roll into 1" balls and then roll the balls in the powdered sugar. Place 1 inch apart onto an ungreased cookie sheet. Bake for 10 to 13 minutes. Remove from baking sheets to cool on wire racks.

Have you considered a batch of Mrs. Fields? It makes about 6 dozen or you can split the recipe and do part with chocolate chips, part with white chocolate/macademia, or even raisin.

Made these last year, have gotten 2 requests to make them again this year. Very very yummy!

NUTELLA-PISTACHIO ICEBOX BUTTER COOKIES

2 sticks unsalted butter, room temperature

¼ cup granulated sugar, plus ½ cup for rolling

1 large egg

½ TSP almond extract

2 ½ cups + 2 TBL sifted all-purpose flour

¾ cups chopped unsalted pistachios

1 TSP kosher salt

13 oz jar of Nutella

In a bowl of an electric mixer fitted with a paddle attachment, beat butter and ¼ cup of granulated sugar on medium speed until light and fluffy, about 3 minutes, scraping down the sides of the bowl as needed. Add egg and almond extract, and beat to combine. Add flour and salt; mix on low speed until combined. Add chopped pistachios until combined.

Turn dough onto a clean work surface. Divide in half and roll each piece into a log about 1 1/2 inches in diameter. Wrap in parchment paper (or plastic wrap), making sure to cover ends completely. Refrigerate until firm, at least 1 hour or overnight.

Preheat oven to 350˚F, with racks in the upper and lower thirds. Line two large baking sheets with parchment paper. Let dough stand at room temperature until soft enough to slice, about 15 minutes. Roll dough logs in remaining ½ cup of sugar, coating them evenly, and slice into ¼” thick rounds. Place about 1” apart on prepared sheets. Bake, rotating sheets halfway through, until golden brown around the edges, 15 to 20 minutes. Transfer cookies to a wire rack to cool completely.

Once the cookies have cooled, spread about 1 teaspoon of Nutella on the bottom side of one cookie and top each with another cookie, creating a sandwich.

Makes about 30 sandwich cookies (60 single cookies)

NO bake cookies! The THINGS love these!

Super easy to make - I can make 3 batches in a night (after work) and you get a TON of cookies. Usually about 5 doz. each batch depending on the size you make them.

Ingredients

* 2 cups sugar
* 4 tablespoons Hershey's cocoa (I think Hershey's is the best)
* 1 stick butter
* 1/2 cup milk
* 1 cup crunchy peanut butter
* 1 tablespoon vanilla
* 3 cups oatmeal
* Waxed paper

Directions

In a heavy saucepan bring to a boil, the sugar, cocoa, butter and milk. Let boil for 1 minute then add peanut butter, vanilla and oatmeal. On a sheet of waxed paper, drop mixture by the teaspoonfuls, until cooled and hardened.

OMG! I used to make these all the time when I first got married. Then I stopped because I kept eating them all! They are so good :drool: and SO easy to make!

Might just have to do these this year and just remind those people in my family with nut allergies to keep away from them (3 of the 6 of us!).

:lol: Don't eat them all! :cds: You'll want your figure back after the bebe comes! :huggy:

But I think the oatmeal & the peanut butter *mostly* cancels out a lot of the calories in the no bakes, because they are healthy, afterall. :wink:
