I need a cookie recipe

NO bake cookies! The THINGS love these!

Super easy to make - I can make 3 batches in a night (after work) and you get a TON of cookies. Usually about 5 doz. each batch depending on the size you make them.
I've been thinking about these for the past two days. :lol: My mom used to make them when I was little, but I haven't had them in a reeeeeally long time. I'm very very tempted to make them right now. :lol:

for a cookie swap..something appealing and pretty..I am out of inspiration..for cookies anyway...baby is telling me to make coconut cake and fudge :( but I dont hear any cookie suggestions..:killingme

I never tried these but I cant tell you how many people sennt it to me.

NEIMAN-MARCUS COOKIES
(Recipe may be halved) 2 cups butter
4 cups flour
2 tsp. soda
2 cups sugar
5 cups blended oatmeal (measure oatmeal and blend in a blender to a fine powder.)
24 oz. chocolate chips
2 cups brown sugar
1 tsp. salt
1 8oz. Hershey Bar (grated)
4 eggs
2 tsp.. baking powder
2 tsp. Vanilla
3 cups chopped nuts (your choice, but we liked pecans best.)
Cream the butter and both sugars. Add eggs and vanilla. Mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips, Hershey Bar and nuts. Roll into balls and place two inches apart on a cookie sheet. Bake for 10 minutes at 375 degrees. Makes 112 cookies.

Bann, i get this part In a heavy saucepan bring to a boil, the sugar, cocoa, butter and milk. Let boil for 1 minute
But after you add the oatmeal and other ingredients how long do boil that???

You don't. Once you boil it for a minute, remove from heat and stir in the rest of the ingredients.

You don't. Once you boil it for a minute, remove from heat and stir in the rest of the ingredients.


Sorry! I just saw this. Nickel is right. You boil the mixture one minute, and then remove from the heat. The rest goes in after that. Don't wait too too long, it will start to dry out.

We've had too much going on this weekend, so I didn't get to do any baking. This week will be too busy, so I can't wait until next weekend - I hope to get some baking started!

But I think the oatmeal & the peanut butter *mostly* cancels out a lot of the calories in the no bakes, because they are healthy, afterall. :wink:


I make them with splenda and low sugar peanut butter

I got these reallly great cookies at the swap..and they are like chocolate chip, but with peppermint chips? I ate the entire half dozen in a day :faint: they were sooooo good. and simple, no doubt. and the chocolate dipped macaroons turned out great.

ooh also a great hint for anyone else going to cookie swaps big lots (if you havent noticed, is my fave place ever lol) has a really good selection of "packaging" to put them in..they have cute cardboard cookie boxes with little windows to see the cookies, an assortment of bags, those little takeput containers, and I got these neat trays with cellophane bags to go over them..for fairly cheap

I got these reallly great cookies at the swap..and they are like chocolate chip, but with peppermint chips?

You can buy pre-packaged mint chocolate chip cookies at the grocery store.

I buy the flavored baking chips (peppermint is yummy) and sprinkle them on sugar cookies. I also use the baking chips when I make rice krispy treats. :smile:

Where do you ifnd these..I looked at food lion (which I realize doesn't have the biggest baking section..:lmao:) and couldn't find them..they would be with the choc chips, right? I am dying for those peppermint chip cookies..sooo good.

Made two batches of No Bakes today! :getdown:

I have 10 dozen-less a handful that Thing1 ate. :biggrin:

I also made a batch of Scotcheroos. I will probably bake a batch of chocolate chip cookies or fudge later. And then I'm done for the day.
